Loins


Skin- and bone-less frozen loin made from cod  gadus morhua, haddock melanogrammus aeglefinus, and saithe pollachius virens. Made of selected fresh fish from daily catches.

Composition

The loin is taken from the thickest part of the top of the fish, from the back bone and down to the pin bone.
The length is 15- 20 cm and the weight varies by size of fish and the customer’s requirements.

Processing

The selected fresh fish is cut in to fillets and skinned by machines, Baader 185/186. The fillets are trimmed and cut by hand. The loins are bone-free, single frozen in a Gyro freezer, glazed and packed. Any bloodstains, discoloration and parasites are also removed.

Packaging

The loins are wrapped in a plastic sheet in cardboard boxes.
Labeling by labeling regulations and customers specification.
Stacked on wood pallets and wrapped in thin plastic film with a plastic sheet on top.

Box size: L: 25cm W: 19cm H: 8cm.
Net weight: 2kg.

Storage

The product should be kept frozen at minimum -18’C at all times.

Shelf life

The expiration date is 18 months from the production date.

Intended use

The product are to be heat treated.
